Institut Culinaire de France
Institut Culinaire de France (ICF) is a private French higher-education institution specialising in sweet culinary arts — pâtisserie, boulangerie, chocolaterie, glacerie — and culinary entrepreneurship. Founded in 2020 with its flagship campus in Bordeaux, ICF combines hands-on apprenticeship-style training with academic management content, awarding state-recognised CAP, Licence Professionnelle, Certificat de spécialisation and a three-year Bachelor in Arts culinaires sucrés & Entrepreneuriat.
The Bordeaux campus occupies a 4,000 m² site in the redeveloping Bassins à Flot district, equipped with six production laboratories (including a dedicated chocolate-confectionery lab), three modular pastry labs, two bakery labs, nine classrooms capped at 16 students each, and a working concept-store bakery-pastry shop open to the public for daily practical training.
ICF's pedagogy is built around small cohorts, Meilleur Ouvrier de France faculty mentorship, and partnerships with leading French maisons. Apprenticeship-track programs (CAP Pâtisserie, CAP Boulanger, Licence Pro MACAT) carry zero tuition for the student and pay a monthly salary, while Bachelor and reconversion students access banking-partner loans and Campus France scholarships.
